Wacky Cake

Wacky Cake

It’s like the universe was whispering (loudly) in my ear….  “Make me a Wacky Cake”.  I haven’t had Wacky Cake in probably 40 plus years, but now here it was in my inbox…on Pinterest and now on some of my favorite food blogs.  I’m always perusing recipes on the internet and ran across a variety of cake recipes – all with different names and all with the same ingredients. There’s always some kind of name assigned to it that gives […]

Ham & Gouda Grit Cakes with Tomato Gravy, Y’all

Unknown-1

I’m a northern girl…even though my husband and I have been moving around the midwest the last 15 years, I’ve always had my heart set on living in the South.  Well we finally made it!  About 6 months ago we settled in Atlanta.  It’s been an extraordinary experience – let me tell you something; Southern Hospitality is not just a rumor.  Along with the great weather, the people here are wonderful. We’ve been busy sampling all the new restaurants and […]

The South Beach Diet (Gluten Free!) Turkey Meatloaf

Look, here’s the deal…. Anybody can alter a recipe to become gluten free by substituting one of the many gluten free flours or “packaged” products on the market.  I’ve been a celiac for years and I realized very early in this process that the key to my eating happiness was going to be, stay away from “fake” food and focus on creativity using “real” food.  The other challenge was going to be, how to simulate some of our favorite comfort […]

This is another Rozanne Gold Recipe from her Cooking 123 Cookbook.  This recipe is so good, I’ve even made it for company! Gluten Free Goodness

I’ve been a diagnosed celiac for almost 10 years.  As I sat in the office of my Gastroenterologist, he asked me if I wanted to see a Nutritionist.  Now, I’ve always considered myself an adventurous cook…love to experiment, my first thought, of course, was what the hell was I going to eat? The thought of talking with a professional about food was exciting….I imagined an immediate bonding experience with this new unmet friend.  My experience with the Nutritionist was disappointing […]

Balsamic Stuffed Burgers…You’re not going to need a bun!

IMG_2273

Rozanne Gold is my kitchen idol!  I made this recipe out of her Cooking 123 cookbook and it’s been a favorite of the family ever since.  Being a celiac, it’s hard to enjoy a burger when you always have to forego the bun….this burger will make you glad you don’t need one!  The best part about all the recipes in Cooking 123?  Each mouthwatering and intriguing recipe only has 3 ingredients!   Balsamic – Glazed Stuffed Burgers 2 1/4 lbs […]

Raspberry Cake…Yup, that’s what I want!

For more years than I can count I’ve been making a raspberry cake that I adapted out of a fiasco an old neighbor had.  The glass cake pan had broken in the oven and there was cake everywhere.  The cake had actually dripped onto the oven racks and baked as a lovely cake coated rack….Being very young at the time, we did the only thing we could think of….we ate the evidence…yup, pulled up a couple of chairs in front […]

Divine Chocolate Cookies…Gluten Free

I’ve been a diagnosed “celiac” for about 7 years now and my philosophy has always been fake food tastes fake….real food tastes better.  So packaged food or recipes labeled as “gluten free” are always dubious and never taste even close to whatever they are imitating.   I don’t usually subject myself to buying quantities of specialty flour to make cookies, cakes or whatever baked goods I’m trying to recreate.  I look for different ways to put things together in order […]
